Buttermilk Spice Muffins

Do you have a hard time finding free muffin recipes? Well look no further. This is one of our most basic muffin recipes and a real treat to eat as well. If you love buttermilk and spice muffins then this is the recipe for you!

Cooking Time: 30 min

Ingredients
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/2 cup sugar
  • 1/2 stick unsalted butter or margarine (not spread), melted and cooled
  • 1 teaspoon vanilla
  • 1 tablespoon sugar, topping
Instructions
  1. Heat oven to 375 degrees F.
     
  2. Spray 12 regular-size muffin cups with nonstick cooking spray or place 12 foil cupcakes liners on a cookie sheet.
     
  3. In a 2-3 quart bowl, stir flour, baking powder, baking soda, spices and salt until blended.
     
  4. Pour over flour mixture and stir just until mixed.
     
  5. Spoon into muffin cups or foil cupcake liners.
     
  6. Sprinkle with the 1 tablespoon sugar.
     
  7. Bake 25-30 minutes or until tops are lightly browned and muffins are springy to the touch.
     
  8. Cool in pan 5 minutes before turning out onto wire rack. Serve warm or room temperature.
