Party Pumpkin Pie

What's a party without sweet treats? This pumpkin pie recipe is just divine! Mix it up at your next party - instead of serving the usual cake and cookies, bake this delicious pumpkin pie recipe. Your guests will be lining up for seconds!

Serves: 10

Cooking Time: 1 hr

Ingredients
  • 1/2 cup ginger snap crumbs
  • 1/2 cup graham cracker crumbs
  • 2 tablespoons liquid margarine
  • vegetable cooking spray
  • 1 egg
  • 2 egg whites
  • 16 ounces canned pumpkin
  • 1/4 cup sugar
  • 2 tablespoons molasses
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 12 ounces evaporated skim milk
Instructions
  1. Heat oven to 350F degrees.
     
  2. Mix the ginge rsnap and graham cracker crumbs together with the margarine.
     
  3. Lightly coat a nonstick 10-inch pie pan with nonstick spray.
     
  4. Press crumb mixture into bottom of pie pan and bake at 350F degrees for 7 minutes.
     
  5. Whisk together remaining ingredients until well blended.
     
  6. Pour mixture into the partially baked pie crust.
     
  7. Bake for 40 to 50 minutes more, or until center of pie does not jiggle when you put on oven mitt and gently shake the pan.
     
  8. Let pie cool on a wire rack. Carefully cut 10 wedges and serve.
