Swiss Strawberry Soup

Ingredients
  • 2 pints fresh strawberries
  • 1 cup orange juice
  • 1 1/2 t quick cooking tapioca
  • 1/8 t cinnamon
  • 1/8 t allspice
  • 1 cup buttermilk
  • 1/2 cup sugar
  • 1 T lemon juice
  • 1 t grated orange or lemon rind
Instructions

Wash and hull berries. Puree. Add orange juice, tapioca, cinnamon and allspice and stir. Pour into casserole dish and microwave 5-6 minutes. Stir in buttermilk, lemon juice, and grated peel. Chill, covered. Variation: For a great summer drink, do as above, then liquefy in blender.
