Salmon Loaf

  • 2 8-oz cans pink salmon
  • 2 eggs, beaten
  • 1/2 c milk
  • 4 Tbsp lemon juice
  • 24 unsalted soda crackers (crushed)
  • salt
  • pepper
  • celery salt
  • seafood seasoning (optional)
  • 2 Tbsp. chopped onion (optional)

Mix all ingredients together in medium sized mixing bowl using hands or a spoon. Pat into greased loaf pan and sprinkle with dried parsley. Bake in preheated 350 F oven for about 20 minutes (or cook in microwave oven for about 7 min.). Serves 2-4.
