Steamed Apples and Rhubarb

Ingredients
  • 1 pound fresh rhubarb, cut into 1-inch pieces
  • 1 pound Granny Smith apples, peeled, cored, and sliced 1/4-inch thick
  • 3/4 cup sugar
  • 1/2 tsp grated orange zest
  • 1/2 tsp ground dried ginger
  • 1/8 tsp ground nutmeg
Instructions

In a 2-quart microwave-safe casserole, combine rhubarb and apples. In a separate bowl, combine and mix well the sugar, zest, ginger and nutmeg. Sprinkle over rhubarb and apples. Toss well to coat them evenly. Cover with plastic wrap (leave a small vent on 1 side so that steam can escape). Microwave on HIGH for 9 to 12 minutes, until rhubarb and apples are tender. Rotate the dish 1/4 turn every 4 minutes. Let stand, covered, for 10 minutes. Serve warm.
