Poor Man's Potato Soup

On a budget, but still want to eat like a king? Then try Poor Man's Potato Soup for a creamy cheesy soup that will keep you coming back for more. Garnish with bacon and enjoy this easy potato soup recipe. Keep your wallet in your pocket tonight.

Ingredients
  • 4 large potatoes
  • 2/3 cup butter
  • 2/3 cup flour
  • 1 1/2 quart milk
  • salt, to taste
  • pepper, to taste
  • 4 green onions, chopped
  • 1 cup sour cream
  • 2 cups crisp-cooked crumbled bacon
  • 5 ounces cheddar cheese, shredded
Instructions
  1. Bake potatoes in Microwave until tender.
     
  2. Melt butter in a medium saucepan. Slowly blend in flour with a wire whisk until thoroughly blended.
     
  3. Gradually add milk to the butter-flour mixture, whisking constantly. Whisk in salt and pepper and simmer over low heat, stirring constantly.
     
  4. Cut potatoes in small chunks. When milk mixture is very hot, whisk in potatos. Add green onion, sour cream and crumbled bacon. Heat thoroughly. Add cheese a little at a time until it is all melted in.

Not only is it NOT a budget minded soup, but it IS one of the most unhealthy soups I have ever seen!!! Can we say clogged arteries?

2 cups of crumbled bacon??? Have you seen the price of bacon lately? This is not a "poor man's" potato soup...

I love this soup I need meal stretchers I am dissabled I live on very little and only have 15 a month in food food stamps I am nit married and I have to go to food pantries for help. I want to thank you for this I use instant potatoes but tastes great.

If you people can't handle these "heart attack" recipes, DONT'T MAKE THEM!!!!!! I get so tired of reading complaints about how fattening, too many calories, etc. Go to another site that has healthy recipes!!!!!!!!!!!!!!!!!!

I'm 75 Never had a sick day in my life and eat meals like this every chance i get.so please do as one or two people suggested go elsewhere

You can never have too much bacon.

Thought about trying Turkey Bacon not so much fat. Turkey Bacon isn't cheap.

Probably the recipe should read "2 Strips of Bacon" not 2 cups.

Not such a poor man's recipe with 2 cups of bacon and 5 oz. cheese and sour cream.

that must be an error, don't you think? did you try it with 2 cups bacon?
