Miracle Microwave Potato Bake

Ingredients

  • 1 onion
  • 1 tablespoon butter
  • 2 large potatoes
  • salt, to taste
  • fresh ground black pepper, to taste
  • 1 tablespoon butter (extra)
  • 1/4 cup milk
  • 1/4 cup soft breadcrumbs
  • 1 tablespoon Parmesan cheese

Instructions

  1. Peel and thinly slice onion.
     
  2. Place onion and first measure of butter in a microwave proof jug or bowl. Cook on HIGH 2 minutes or until soft.
     
  3. Wash and thinly slice potatoes. Place half the potatoes on the base of a microwave-proof dish. Top with onion then arrange the remaining potato on top.
     
  4. Season to taste with salt and pepper, cover and cook for an additional 5 minutes on HIGH.
     
  5. Remove cover, dot with butter and pour over the milk. Cover and continue cooking on HIGH an additional 5 minutes or until potatoes are tender.
     
  6. Spread with breadcrumbs and Parmesan cheese. Cook in microwave until golden.

This is a nice easy microwave potato recipe that I am going to try. It's kind of like scalloped potatoes. I would use skim milk and maybe a different cheese, like a shredded mozzarella. Could you use dehydrated onion flakes? You could probably double this recipe for more helpings. Thanks for sharing this recipe!
