Mango Chicken

  • 4-6 Chicken Breasts
  • 2-3 tablespoons sweet chilli sauce
  • 2 - 3 dessertspoons grated green ginger
  • 750 grams (1 and quarter pounds) mango peeled and chopped
  • 1/4 to 1/2 cup fresh lemon juice

Place all into casserole dish. Mix to combine well. Cover with plastic wrap leaving an opening one end for steam to escape. Cook at 100% HIGH in Microwave (on 900 Watt Microwave) for about 20 minutes or until no pink runs from chicken and is cooked through. Serve on a bed of rice, with salad or even pasta. Serve with Risone pasta, 1/2 avocado and a good dollop of plain yoghurt that has a bite to its own.
