Citrus Couscous

Ingredients
  • 3/4 cup water
  • 2 tablespoons lemon juice
  • 1/4 cup orange juice
  • 10 ounces couscous
  • 1/2 purple onion, chopped
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh mint
  • 1/2 cup lemon juice
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/2 cup golden raisins
  • 1/3 cup toasted slivered almonds
Instructions

Microwave 3/4 cup water, 2 tablespoons lemon juice and orange juice in a microwave safe bowl on high for 3 minutes or until boiling. Add couscous and onion, parsley and mint. Stir until liquid is absorbed. Cool, fluffing occasionally with a fork. Whisk together 1/2 cup lemon juice, oil, salt, and paprika. Add lemon mixture, raisins and almonds to couscous, tossing gently. Chill.
