Creamed Onions

Ingredients
  • 30g butter
  • 1 small onion
  • 1 Tbs flour
  • 1 1/2 cups milk
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • ground nutmeg to taste
  • paprika, optional
  • 500g frozen pearl onions or tiny white pickling onions peeled and trimmed
Instructions

(650 watts). Heat butter in a 4-cup glass jug, covered with a paper towel, on HIGH for 45 seconds or until melted. Add onion and cook on HIGH for 2 - 3 minutes until softened, stirring once. Stir in flour until blended. Cook on HIGH for 1 minute, stirring halfway through cooking. Gradually stir in milk. Cook on HIGH for 3 - 4 minutes, until thickened and is smooth, stirring twice. Season with salt, pepper and nutmeg. Combine onions and sauce in a 23cm round baking dish. Cook in HIGH for 3 - 4 minutes, until sauce bubbles, stirring halfway through cooking. Sprinkle if you like, with paprika. Serve immediately.
