Asparagus with Vegetable Medley

This delicious combination of fresh vegetables is one of the best quick and easy vegetable recipes around. Make a tasty and healthy side dish in the microwave. Eating healthy recipes has never been easier.

Ingredients
  • 6 medium green onions, sliced thin (3/4 cup)
  • 1/2 cup Parmesan cheese, grated
  • 1/4 teaspoon dried basil, crumbled
  • 1/4 teaspoon oregano leaves, crumbled
  • 1/4 teaspoon garlic powder
  • 1 pound fresh asparagus, trimmed
  • 3 medium ripe tomatoes, quartered
  • 2 tablespoons water
Instructions
  1. Mix green onions, Parmesan cheese, basil, oregano, and garlic powder in a small bowl until blended.
     
  2. On a 10- to 12-inch round microwave-safe serving plate, arrange asparagus spoke-fashion with stem ends toward edge of plate and tips overlapping in center.
     
  3. Place tomato quarters in a circular pattern 2 inches from edge of plate. Sprinkle vegetables with water, then the green onion mixture. Cover with vented plastic wrap.
     
  4. Microwave on high 5 to 7 minutes, rotating dish 1/2 turn once, until vegetables are hot.
     
  5. Let stand covered 3 to 5 minutes until crisp-tender. Tilt plate and drain off liquid through vent opening.
