Mexican Stuffed Peppers

Bright colored peppers stuffed to the brim with delicious beef and rice? We call that heaven on a plate! Of all the quick Mexican recipes we've made, this one for Mexican Stuffed Peppers is one of our favorites. It's a flavorful dish that you'll keep coming back to!

Serves: 6

Preparation Time: 10 min

Cooking Time: 10 min

Ingredients
  • 1 can (15 oz.) La Preferida Spanish Rice
  • 1 pound ground beef, browned and drained
  • 4 medium green bell peppers
  • 2 cans (10 oz. each) La Preferida enchilada sauce
Instructions
  1. Preheat oven to 325 degrees F.
  2. Combine rice and beef.
  3. Cut peppers in half lengthwise; remove seeds and core.
  4. Generously fill each pepper half with rice and beef mixture.
  5. Pour 1 can sauce into a 12x8x3 inch baking dish. Place filled peppers in dish and top with 1 can sauce.
  6. Cover dish with foil and bake 45 minutes or until peppers are tender.
