Seafood Lasagna

Ingredients

  • 1 cup chopped onions
  • 1 clove garlic, minced
  • 2 Tbsp olive oil
  • 4 Tbsp flour
  • 2 cups nonfat milk
  • 3 ounces grated Swiss cheese
  • 2 cups cooked chopped fresh spinach, drained
  • 1 ounce grated Parmesan cheese
  • 1/4 tsp nutmeg
  • 12 ounces cooked seafood
  • 3 ounces lasagna noodles
  • 1 cup sliced mushrooms

Instructions

Cook onions and garlic in oil. Stir in flour, cook lightly. Gradually stir in milk, stirring until thickened. Stir in Swiss cheese. Remove From heat. In a bowl combine 1/2 the sauce with spinach, Parmesan cheese, nutmeg and seafood. Spread mixture in the bottom of a casserole dish. Cook noodles and layer over spinach mixture. Add mushrooms to remaining sauce and bring to a boil, spread over noodles. Cover and bake at 350F for 30 minutes. Makes 4 servings.
