Beef Vindaloo

Ingredients
  • 2 pounds beef steak, fat removed and cut in cubes
  • 3 Tbsp coriander
  • 1 Tbsp cumin
  • 6 cloves
  • 2 inches cinnamon
  • 2 tsps fenugreek seeds
  • 1 tsp fennel seeds
  • 6 dried chiles, soaked
  • 8 cloves garlic
  • 1 large onion
  • 1 inch ginger
  • 1/4 cup white vinegar
  • 1 Tbsp ghee (or oil)
  • 2 bay leaves
  • 2 cups beef stock
Instructions

Blender spices, onion, garlic, ginger, and vinegar. Marinate meat in the mixture for 2 hours. Fry the meat in ghee or oil, add bayleaf and stock, cook until tender. Remove bay leaves and serve with rice and dal and chutneys.
