Stained Glass Cookies

Ingredients
  • 2 1/2 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup butter, softened
  • 1/2 cup packed brown sugar
  • 2 tsps vanilla
  • 1/3 cup light corn syrup
  • about 1 lb clear hard candy in different colors
  • 1 egg white beaten with 2 tsp water for glaze
Instructions

In a medium bowl combine flour, baking powder, baking soda and salt; set aside. In a large mixing bowl beat butter, brown sugar and vanilla together until light and fluffy. With mixer running at medium speed, gradually drizzle in corn syrup. Stir in flour mixture 1/2 cup at a time, blending well after each addition. Form dough into a ball; cover and set aside 15 minutes. Group the candies by color. Place one color at a time in a plastic bag (I double bag to prevent mess!). Use a hammer to crush candy into about 1/4 inche pieces. Place each color of crushed candy into a separate small bowl. Preheat oven to 350. Line baking sheets with aluminum foil. On a lightly floured surface, roll dough out into a rough circle 1/4 inch thick. Cut out dough using 2-4" cookie cutters. Use tiny cookie cutters or canape cutters to cut out designs in each cookie. Leave at least 1/4 inch of dough between small cut outs or cookie will not hold together. Arrange cookies 1 inch apart on prepared baking sheets. Fill spaces in each cookie with crushed candy just to the surface of the dough. Do not overfill. Brush dough surfaces with egg glaze. Bake 7-10 minutes or just until candy is melted and bubbly. Cool on baking sheet 20 minutes before peeling foil from back of cookies. These guys are just beautiful-- sparkly and colorful and unique. I use a set of graduated star cookie cutters to make these in all different shapes. Recipe freezes extremely well and doubles easily.
