You get divine pumpkin, tart cranberries, soft and chewy oatmeal, and dark chocolate all clustered together into one delicious bar that is way beyond delightful."

Ingredients

  • 1 cup all purpose flour
  • 3/4 teaspoon pumpkin pie spiece
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 cup brown sugar
  • 1 1/4 cup old fashioned rolled oats
  • 2/3 cup pure pumpkin
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips
  • 1/4 cup dried cranberries or craisins

Instructions

  1. Preheat oven to 350 degrees. Spray an 8x8-inch baking dish with non-stick cooking spray.

  2. In a bowl, stir or whisk flour, sugar, pumpkin pie spice, salt, baking soda, and baking powder until combined and set aside.

  3. In another bowl, using mixer, mix pumpkin, eggs, and vanilla until combined.

  4. Add in flour mixture and mix until combined.

  5. Using a wooden spoon, stir in oats, 1/2 of the chocolate chips, and 1/2 of the cranberries until mixed in.

  6. Spread batter evenly into the prepared baking dish. Sprinkle with remaining chocolate chips & cranberries.

  7. Bake for approximately 25-30 minutes or until golden brown.

Homemade oatmeal/granola bars are a sweet, pretty healthy treat that is great to take with you on the go! If you aren't a big pumpkin fan, focus on the brown sugar and some cinnamon and nutmeg to season the bars. These would also be great if you changed the chocolate chips with vanilla chips and added some chopped nuts like almonds or walnuts!
