Choclate Ginger Rum Ball

Ingredients

  • 1 1/2 cup gingersnap cookies, crushed fine in a blender
  • 1/2 cup walnuts also crushed in a blender
  • 1 cup icing sugar
  • 2 tablespoons coco
  • 2 tablespoons light corn syrup
  • 1/3 cup rum
  • additional icing sugar for rolling

Instructions

Mix all ingredients together. add more or less rum to make a good mixture for rolling. Make 1 inch ball and roll balls in icing sugar. Let sit one week then re-roll in icing sugar. Variation: may use chocolate sprinkes to roll in.
