United Nations Quesadillas

This fantastically simple idea brings a whole new flavor to recipes for the grill. Check out these cleverly titled United Nations Quesadillas. Using simple, fresh ingredients like basil, tomato and mozzarella, everyone will love them.

Serves: 4

Ingredients
  • 4 (8-inch) flour tortillas
  • 12 ounces grated or sliced fresh mozzarella
  • 2 tomatoes, sliced 1/4 inch thick
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 cup fresh basil leaves
Instructions
  1. Preheat grill to medium heat.
     
  2. Place the torillas on the cutting board. Arrange the tomatoes on one half of each tortilla.
     
  3. Top the tomatoes with the mozzarella and basil leaves.
     
  4. Season with salt and pepper.
     
  5. Place the quesadillas around the perimeter of the grill until the cheese melts and the tortillas are golden.
     
  6. Fold the torillas in half over the filling.
     
  7. Immediately cut the quesadillas into wedges and serve.
