Beef Schnitzel

Ingredients
  • 3 pounds / 1.4 kg rump roast or any lean cut
  • 1 cup / 250 ml flour
  • 1 cup / 250 ml bread crumbs
  • 1 tsp / 5 ml salt
  • 1/2 tsp / 2 ml pepper
  • 2 eggs, beaten with 2 Tbsp / 30 ml - milk
Instructions

Slice meat 1/4" (.6 cm) thick while partially frozen. Mix flour, bread crumbs, salt & pepper. Dip each slice into the flour-breadcrumb mixture, then into the egg mixture, then into the flour mixture again. Brown quickly in skillet with vegetable oil or shortening to cover bottom. Remove to roasting pan as meat is browned.
