Baked Bananas

Ingredients

  • 5 to 6 ripe large bananas
  • 1/2 stick butter or margarine
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1/4 cup blackberry brandy
  • 1 tsp cinnamon
  • grated fresh nutmeg
  • Optional: fresh blackberries, whipped cream, ice cream

Instructions

In a 9 inch square pan placed peeled whole bananas side by side. Melt butter or margarine and pour over bananas. Sprinkle with the sugars and cinnamon. Pour on the brandy. Bake in a 350F oven until tender about 20 to 30 minutes. Place bananas in individual dishes, grate fresh nutmeg over and pour over some of the sauce from the pan. Serve if desired with a scoop of ice cream, dollop of whipped cream and some fresh berries sprinkled over. Serving size: one banana per serving. Experienced cooks may wish to flambe the dessert if desired.
