Granny's Apple Pie

Ingredients

  • Pastry for 2 crusts
  • 8 cups Granny Smith Apples, peeled, cored, and thinly sliced apples
  • 1 tablespoon lemon juice
  • 1 cup sugar
  • 3 tablespoons cornstarch or tapioca
  • 1 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 2 tablespoons butter or margarine
  • 1/2 cup milk

Instructions

  1. Preheat oven to 425 degrees F.
     
  2. Prepare pastry and refrigerate while making filling. Place apple slices in a large bowl.
     
  3. Sprinkle with with lemon juice, sugar, cornstarch, cinnamon, and ginger. Stir to mix well.
     
  4. Roll out pastry crust and put into pie pan. Mound apple mixture into shell. Pour any remaining juice from the bowl over apples.
     
  5. Dot mounded apples with butter. Roll out top crust and place over filling, sealing edges.
     
  6. Brush top lightly with milk (sprinkle with sugar if desired). Cut small vents in center of top.
     
  7. Cover edge with aluminum foil to prevent excessive browing.
     
  8. Set in a rimmed baking sheet and bake at 425 degrees F for 30 minutes an lowest rack in oven.
     
  9. Remove foil and bake 20 to 30 minutes more or until apples are fork-tender. Remove from oven and cool on rack.

This is a very good recipe and is not liquidy If you were to cut the pie without letting it completely cool down so that the juices will thicken then your pie will be running I followed the recipe as it was published with just a few minor changes just due to my taste perferences I used medium to large Granny Smith apples and added teaspoons of apple pie spice Again this was only for my personal taste perference This is the second time I made this recipe both times were very good and easy to make The first time I followed the recipe exactly as printed Warmed each piece in microwave and served with a scoop or two ice cream my perference on the ice cream is butter pecan Second perference is to top piece of pie with slice of cheese then drizzle with carmarel sauce then warm in microwaveRead More
