Vanilla Ice Cream

Ingredients
  • 2L milk
  • 1L heavy cream
  • 2 vanilla beans split
  • 24 egg yolks
  • 675g. granulated sugar
Instructions

Boil the milk and cream with the split bean. Mix the egg yolks and sugar together. Make a liason with the milk and egg mixture. add the rest of the eggs to the milk, reduce to a simmer and stir until it thickens slightly. Chill in an ice bath, then freeze in your ice cream maker. This is basically an anglaise sauce, if you need help with the instructions, look in a cookbook with an Anglaise recipe.
