Jello Strawberry Pie with Graham Cracker Crust

If you want an easy, healthy Jello dessert with just a few ingredients, this is perfect for you! The kids will love it, and you can even get a serving of fresh fruit for dessert too.

Ingredients

  • 1/2 cup sugar
  • 2 1/2 tablespoons corn starch
  • 1 package strawberry Jello
  • 1 3/4 cup water-boiling
  • strawberries sliced
  • graham cracker pie crust

Instructions

  1. Slice strawberries and place in pie plate with crust.
     
  2. Mix sugar, corn starch, jello and water, cook until thick.
     
  3. Add a very small amount of butter and pour over strawberries. Cool in fridge.
     
  4. Top with cool whip and garnish with more sliced strawberries.

I won't rate just yet. This sounds great, but, I am going to try a "diabetic" version first. I will replace sugar w/stevia or splenda, use sugar-free jello, and use the light version of coolwhip. I will let you know.

I've been making this for 40+ years, with a twist. Instead of using butter, sugar and corn starch, use a package of strawberry Jello as directed, cool til slightly firm, and fold in 8 oz package of plain or strawberry yogurt, and sliced, chopped or whole strawberries, pour into graham cracker crust or parfait glasses, top with rest of strawberries and chill until firm. Delicious, not as sweet alternative.
