Awesome Jello Rhubarb Pineapple Jam Jello Recipe

Making your own jam can be inexpensive, fun and easy! This Jello Rhubarb-Pineapple Jam has a unique flavor with chunks of fruit to top it off. Try it on some whole-wheat toast or as a yogurt topper.

Preparation Time: 10 min

Cooking Time: 20 min

Ingredients
  • 8 cups chopped rhubarb
  • 6 cups white sugar
  • 19 ounces can crushed pineapple with juice
  • 2 boxes Jello - use raspberry, strawberry, or orange or get experimental!
Instructions
  1. Combine rhubarb, sugar and pineapple with juice in a big pot and stir well.
     
  2. Bring to a boil and simmer for 20 minutes, stirring often. Skim off foam.
     
  3. Remove from heat and stir in the 2 boxes of Jello. Stir to dissolve, then put in jars.
     
  4. Let cool, then refrigerate or put in the freezer.
