Spinach, Mushroom and Egg Jackets

Ingredients
  • 1 Tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, crushed
  • 175 grams / 6 oz mushrooms, thinly sliced
  • 225 grams / 8 oz fresh spinach
  • 3 Tbsp mascarpone cheese
  • 2 hot baked potatoes
  • 2 small eggs
  • 2 Tbsp grated vegetarian Parmesan
  • seasoning
Instructions

Heat the oil in a pan and fry the onion and garlic for 3 - 5 minutes until softened. Add the mushrooms and continue to cook until golden. Season. Pile in the spinach and cook gently until wilted. Simmer for 3 - 4 minutes until the liquid has evaporated, add the mascarpone and cook for 2 minutes. Cut a cross in the top of each potato and squeeze to open. Fluff up the flesh with a fork. Spoon in spinach mixture, making a hollow. Crack an egg into each well, season, and cover potatoes with foil. Return to the oven and cook for 10 - 15 minutes until the whites are set. Serve sprinkled with Parmesan. Serves 2.
