Easy Anytime Frittata

I'm a sucker for making breakfast for dinner, which is why this Easy Anytime Frittata recipe is perfect for me! Easy breakfast recipes like this one make you want to eat this dish anytime, like dinner!

Serves: 6

Cooking Time: 38 min

Ingredients
  • 3/4 cup egg substitute
  • 7 eggs
  • 1/4 cup 2% milk
  • 1/2 zucchini, chopped
  • 1/2 yellow zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 small white onion, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon dill
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 8 slices thin deli ham, sliced and diced
  • 4 small country breakfast sausage links (no nitrates), sliced
  • 4 small red potatoes, washed and chopped (peel can still be on)
  • 1 tablespoon olive oil
Instructions
  1. Preheat oven to 400 degrees F.
     
  2. Add olive oil to large cast iron skillet (important must be cast iron). Get pan hot.
     
  3. Add potatoes to skillet, turn heat to medium (cover) and cook 5 minutes, then add onion, cook another 5 minutes. Add a little water to help cook potatoes if necessary.
     
  4. Add the rest of the veggies to skillet and cook until all veggies are tender, including potatoes, about 10 minutes.
     
  5. In meantime add egg sub, milk and eggs to medium bowl, scramble. Add spices and mix.
     
  6. If veggies are tender, turn skillet heat to low. Pour egg mixture over vegetables and let sit for a couple minutes.
     
  7. Take the entire cast iron pan and put into the oven for 15 minutes, baking until eggs are set.
     
  8. Turn on the broiler, move the cast iron pan to higher shelf (be careful it’ll be hot!) and broil for 3 minutes to get a little browned top.
     
  9. Remove from oven carefully. Let sit for few minutes, slice into pie shapes and serve immediately.
