Ingredients

  • 3 (3-ounces each) boxes of raspberry Jello or gelatin.
  • 3 cups water
  • 2 cups sugar
  • 1 can (20-ounces) crushed pineapple, undrained
  • 12 ounces bag fresh cranberries
  • 3 large Red Delicious apples, peeled, cored and chopped
  • 6 small sweet oranges, peeled, seeded and chopped
  • 1 cup chopped pecans

Instructions

  1. Mix gelatin with sugar in a large bowl. Bring water to a boil and pour over the sugar/gelatin mixture. Stir or whisk until dissolved. Set aside.

  2. In a large bowl, mix together pineapple, chopped apples and chopped oranges.

  3. Place cranberries in a food processor and pulse several times until finely chopped. Add chopped cranberries to the other fruit in the bowl.

  4. Add pecans to fruit mixture and stir everything to combine.

  5. Pour gelatin mixture over the fruit/nut mixture and stir well.

  6. Cover and refrigerate for at least a day. 24 hours or more, can be made up to two weeks ahead.

Can I use peanuts or sunflower seeds in this recipe in place of the pecans? We have an allergy in our house to tree nuts, so we have to substitute or omit the nuts. I was worried that this used canned fruit salad. We can't have pears, but this recipe uses all fresh fruit. I love using fresh fruit for desserts.

This sounds good except it has waaaaay too much sugar in it....
