Tropical Coconut Surprise

When you want to serve up an out-of-the-ordinary dessert, especially during the warm weather months of spring and summer, turn to this easy recipe for Tropical Coconut Surprise. Made with freshly grated coconut, lemon juice, milk, butter and sugar, this rich, creamy and citrus-y dessert is one you won't soon forget. Tasting this recipe with coconut is like taking a tropical vacation via your taste buds so go ahead and bake up this coconut-inspired treat tonight!

Cooking Time: 40 min

  • 2 tablespoons butter
  • 1 cup sugar
  • 4 eggs, separated
  • 1/3 cup lemon juice
  • 1 teaspoon grated lemon rind
  • 1/4 teaspoon salt
  • 1 cup freshly grated coconut
  • 1 tablespoon potato starch
  • 1 cup milk
  1. Preheat oven to 375 degrees F.
  2. In a large mixing bowl, cream the butter.
  3. Gradually add the sugar and cream together until light and fluffy.
  4. Add the egg yolks and beat well.
  5. Add the lemon juice, lemon rind and salt and blend well.
  6. Fold into the coconut and potato starch.
  7. Stir in the milk.
  8. In a clean medium sized bowl, beat the egg whites until stiff but not dry.
  9. Fold egg whites into the lemon-coconut mixture.
  10. Pour the batter into a greased 6x10 inch baking dish or a 1 1/2 quart casserole. Set the dish into a pan containing 1 inch of hot water and bake for 35-40 minutes.
  11. Chill if desired. Garnish servings with toasted coconut if desired.
