Mix the egg yolks together with 3 Tbsp spoons of the sugar till creamy. Add the mascarpone and most of the Amaretto and stir (do not use the electric mixer) till a thick cream. Leave it for at least 2 hours in the refrigerator, (4 to 6 hours makes it only taste better) Note: If you don't have chocolate shavings, you can use rough cacao powder (not the sweetened kind for making drinking chocolate).
