No Bake Coconut Balls

Ingredients

  • 2 pounds powdered sugar
  • 1 (12-ounce) can sweetened condensed milk
  • 1/2 cup pecans, chopped
  • 1 teaspoon vanilla
  • 2 cups coconut
  • 1/4 cup butter, softened
  •  
  • For the chocolate coating:
  • 18 ounces semi-sweet or milk chocolate chips
  • 3 tablespoons shortening

Instructions

  1. Mix together first six ingredients. Chill mixture for about 30 minutes to 1 hour.
     
  2. Form into 1-inch balls; chill again on wax paper-lined cookie sheet.
     
  3. Prepare chocolate coating. Melt chocolate and shortening over low heat, stirring constantly. Use 1 Tablespoon of shortening for every 6 ounces of chocolate.
     
  4. Dip coconut balls in chocolate coating. Chill for another hour before serving.

Can you substitute Coconut Oil for shortening?

how about using Almond flavoring instead of Vanilla? Boy it makes such a big diffrerence!!I may try one batch with Finely chopped cherrys added in too- will this make it to wet or not?
