Muskoka Blueberry Buckle

  • 3/4 cup white sugar
  • 1/2 cup vegetable shortening
  • 1 egg
  • 2 cups flour
  • 2 1/2 tsps backing powder
  • 3/4 cup milk
  • 2 cups blueberries
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 cup butter
  • 1/2 cup flour

Beat sugar and shortening together,mixing well. Add egg and mix well. Mix dry ingredients together and add to sugar mixture alternating with milk. Batter should be a bit heavier than for a cake. Pour into 8" greased springform pan, topping with blueberries. Mix topping ingredients together, until it balls up. Add 1/3 cup quick-oats if desired. Using your fingers, crumble over blueberries, covering well. Bake in preheated 350F oven, 50 - 60 minutes. Cool for 1 hour before serving.
