Mascarpone and Lime Torte

Ingredients
  • 200g pack ginger snap biscuits, crushed
  • 50 grams butter, melted
  • 2 250g tubes mascarpone cheese
  • 40g icing sugar
  • Finely grated zest and juice of 2 limes
Instructions

Mix biscuits and butter and press into 10cm spring sided or loose bottomed tin. Place mascarpone, icing sugar, lime zest and juice in bowl and beat together. Spread over the biscuit base. Decorate with green seedless sugared grapes and chocolate leaves, if desired.
