Ingredients

  • 1/2 cup graham crackers
  • 3 tablespoons butter, melted
  • 1/2 teaspoon granulated sugar
  • 1 (8-ounce) block of cream cheese
  • 1 teaspoon vanilla extract

Instructions

  1. In a small bowl, mix graham cracker crumbs, butter, and sugar.  Divide evenly into 4 small glasses.  Refrigerate while making the filling.

  2. In the metal bowl of a stand mixer, whip the heavy cream until soft peaks form.  Remove to another bowl and set aside.

  3. In the same bowl, add cream cheese, sugar, and vanilla and whip until the mixture is no longer lumpy and very smooth.

  4. Carefully fold in the whipped cream with a spatula until there are no more lumps.

  5. Spoon into the glasses over the graham crackers and refrigerate for at least an hour to set.

  6. Serve with fresh fruit of your choice.

I am curious about the quantity of cream to whip up? Watching the video it appears to me, about 2 cups of cream. Is this a good guess? Thank you in advance for your help. I am going to the canning jar ring and lit to make the cheese cakes in. I'll have several fruit toppings prepared, each person will be able to have their hearts desire. ( I generally use wide mouth tops, sometimes I use the regular top which are a bit smaller, making a wonderful single serve dessert.

I was reading the directions for this no bake cheesecake. In the ingredients list there is no mention of heavy cream, but in step 2 instructions read "whip the heavy cream until soft peaks form". How much heavy cream is needed?

You peaked my interest at Lazy Girl then no bake, no way! I love simple and easy and cheesecake is one of my favorites. This one is getting saved to the recipe box and getting a star appearance on next Sunday dinner.

The video shows how wonderfully simple this is to make. I love the idea that, since they're individual mini-portions, they can easily be customized with different fruit. The sliced strawberries are a nice garnish, as would be blueberries, cherries, or peaches. I'd also try adding some flavoring extract to the cream cheese mixture for an additional layer of taste. Depending on the fruit used, using chocolate graham cracker crumbs would also be good.

I love individual servings. I don't know if this a lazy girl's recipe or busy girl but it sure does look and sound fantastic. I will definitely be making this, especially as a dessert when I have people round. It always looks as if you have gone to such trouble when you serve individual portions to guests! These certainly look absolutely luscious and would be perfect with a nice cup of coffee after dinner.
