Bread Pudding

Ingredients
  • 4 cups milk
  • 1/2 cup sugar
  • 2 cups white sandwich bread; stale, cubed
  • 1/3 cup sultanas
  • 2 tablespoons butter
  • 2 eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla essence
  • 2 tablespoons dessicated coconut (approx only)
Instructions

Australian measures used: 1 tblspn = 20ml (US=15ml) Preheat oven to 180 C (350F). Scald the milk in large saucepan with bread cubes till soggy. Add butter, sultanas, sugar and salt. Stir to mix. Remove from heat and cool for a little while. Meanwhile lightly beat the eggs and add to mixture when cooled, then add vanilla essence. Pour into a lightly buttered oven-proof casserole. Sprinkle top liberally with dessicated coconut or ground nutmeg. Place casserole in a pan of boiling water and bake for approx. 1 1/4 hours.
