Featured Recipe - Lemonade Party Cake

In summertime, everyone thinks of lemonade...but not everyone thinks of it in terms of cake.  Here's a scrumptious Betty Crocker recipe using her famous SuperMoist Lemon Cake Mix.

Ingredients

  •  1 package Betty Crocker SuperMoist Lemon Cake Mix
  •  1 6-ounce can frozen lemonade concentrate, thawed
  •  3/4 cup powdered sugar
  •  1 tub soft whipped fluffy white or fluffy lemon ready-to-spread frosting
  •  yellow colored sugar (optional)

Instructions

  1. Bake cake as directed on package for 13x9-inch pan.
  2. Cool 15 minutes.
  3. Mix lemonade concentrate and powdered sugar.
  4. Poke long-tined fork into top of warm cake every 1/2 inch, wiping fork occasionally to reduce sticking.
  5. Drizzle lemonade mixture evenly over top of cake.
  6. Cover and refrigerate about 2 hours or until chilled.
  7. Spread frosting over top of cake.
  8. Sprinkle with sugar.
  9. Cover loosely and refrigerate any remaining cake.

Who Was Betty Crocker, Anyway?

Actually, there really never was a Betty Crocker!  She was a brand name and tradmark that was first developed back in 1921, by the Washburn Crosby Company.  It was their way of creating a persona to answer questions asked by their consumers.  The story goes that they chose Betty as her first name because it sounded all-American and cheery.  Betty's last name was that of William Crocker, one of the directors of Washburn Crosby.

Even though Betty Crocker wasn't a real person, remember that those Betty Crocker recipes are among the most popular out there, and they are tried and true.  In fact, the original Betty Crocker Cookbook was first published in 1950, as the Betty Crocker Picture Cookbook.  Most of us know this ubiquitous tome by its current name, and it's likely that you know at least one person who has one in her household.
