Railroad Slaw

This may have been the type of coleslaw railroad workers ate in the 1800's, or maybe it's just a simple and satisfying coleslaw recipe that everyone, including railroad workers, like to eat. Either way, it's some pretty awesome coleslaw.

Ingredients
  • 3 cups firmly packed, thinly shredded cabbage
  • 2 tablespoons minced onion
  • 1/4 cup sugar
  • 1/4 tablespoon salt
  • 1/4 tablespoon dry mustard
  • 1/4 teaspoon celery seed
  • 1/4 cup white vinegar
  • 1/4 cup peanut oil
Instructions
  1. Sprinkle the cabbage with the onion & sugar.
     
  2. In a small saucepan whisk together the remaining ingredients; stirring often, bring to a boil; pour at once over the cabbage; mix thoroughly.
     
  3. Cover and chill at least 4 hours before serving; keeps well for as long as 5 days. Makes 4 to 6 servings.
