I like to make a rotisserie chicken just about every weekend so that I can use the meat for quick and tasty pasta salads like this! They are a great thing to bring to work for a quick lunch, and on a busy weeknight everyone can grab it when they can! Since it has lots of veggies and a good amount of protein in it, it can make a complete and satisfying meal.
