Funny Face Cupcakes

Finally, a recipe that uses a cocoa alternative! This recipe uses carob powder (ground seeds and pods of the carob tree) as a substitute to chocolate. An added bonus to this cupcake recipe is that it is caffeine free!

Cooking Time: 25 min

Ingredients
  • 1 1/4 cups unbleached or whole wheat pastry flour
  • 3/4 cup cocoa or carob powder
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup softened butter or applesauce
  • 3 eggs or egg replacer
  • 2/3 cup soya or rice milk
  • 1 teaspoon vanilla
  • assorted candies
  • 1/3 cup butter
  • 1/3 cup cocoa or carob powder
  • 1/2 teaspoon vanilla
  • 3 cups sifted icing sugar
  • 3 tablespoons soya or rice milk
Instructions
  1. Preheat oven to 350 degrees F.
     
  2. Set 22 large paper baking cups in muffin tins.
     
  3. Sift together flour, cocoa, baking powder, and salt.
     
  4. Cream butter; gradually add sugar.
     
  5. Add eggs one at a time, beating well after each addition.
     
  6. Add sifted dry ingredients to creamed mixture alternately with milk and vanilla, combining lightly after each addition.
     
  7. Divide batter evenly among baking cups.
     
  8. Bake in preheated oven at 350 degrees F for 20-25 minutes. Cool and frost.
     

Frosting

  1. Melt butter in a saucepan. Remove from heat.
     
  2. Stir in cocoa and vanilla.
     
  3. Alternately blend in sifted icing sugar and milk until frosting is smooth and of spreading consistency.
     
  4. Use candies to make funny faces.
