Swiss Crab Casserole

Swiss crab casserole is a unique and sophisticated way to use crab meat. This slow cooker casserole is loaded with veggies, crab, cheese, rice and more.

Ingredients

  • 3 tablespoons butter or margarine
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 3 tablespoons flour
  • 3 chicken bouillon cubes
  • 2 1/2 cups boiling water
  • 1 cup quick-cooking rice
  • 2 7-ounce cans crabmeat, drained and flaked
  • 2 cups shredded Swiss cheese
  • 1 4-ounce can sliced mushrooms, drained
  • 1/4 cup sliced pimento-stuffed green olives
  • 1 cup buttered bread crumbs
  • 1/2 cup shredded Swiss cheese

Instructions

  1. In skillet, melt butter and lightly saute celery, onion, and green bell pepper. Remove from heat and blend in flour.
     
  2. Dissolve bouillon cubes in boiling water. Add to skillet and bring to boil, stirring constantly. Cook sauce over medium heat for about 2 minutes or until slightly thickened.
     
  3. Lightly toss remaining ingredients except buttered crumbs and 1/2 cup shredded Swiss cheese in slow cooker. Add sauce; stir lightly to blend. Cover and cook on High for 3 to 5 hours.
     
  4. Pour contents of slow into shallow heatproof serving dish. Cover with buttered bread crumbs and sprinkle with 1/2 cup shredded cheese. Set under broiler until cheese is melted and bread crumbs are browned.

Made this and was disappointed. A great concept but I wonder if the author of the recipe has ever made it. I didn't understand the need to slow cook up to five hours on high for ingredients like cheese and crab. Maybe to reduce? I cooked for 3 hours and it was very dry. I can't imagine what it would have been like after cooking 5 hours on high. Way too many bread crumbs for such a small batch and when put under the broiler the cheese on top burned almost immediately and had to be scraped off. I was also suspect that the recipe called for no spices at all. Not even salt and pepper. And no lemon or lime juice with a seafood? I feel like I wasted a lot of time and expensive ingredients on this recipe.
