Spanish Rice

Ingredients
  • 1 1/2 c.raw long grain rice
  • 1/2 c. olive oil, butter or margarine
  • 1 1/2 c. tomato juice
  • 1 1/2 c. water
  • onion (as much as you like)
  • green pepper (as much as you like)
  • 1 1/2 teaspoons salt
  • 1 pound hamburger, browned and drained
Instructions

Saute rice in oil until golden brown. Put in slow cooker with all remaining ingredients. Stir well. Cover and cook on low 4-6 hrs or on high 2-3 hrs. You can also substitute tomato juice for some or all of the water, depending on how much tomato flavor you want. I usually use about 2 c tomato juice.
