There's nothing more you can ask for than simple hash brown casserole recipes. Cheesy, creamy and easy to make, they are the epitome of comfort food. Try Slow Cooker Cheesy Hash Brown Casserole. It's not only one of the cheesiest casseroles you'll taste, but it's also one of the easiest, fuss-free casseroles your casserole-loving heart could ever desire. Hash browns made in the slow cooker - you just can't pass that up!

Serves: 8

  • 1 (26 to 32 ounces) bag of frozen hash browns
  • 1 (8-ounces) container of sour cream
  • 1 can (10.5-ounces) cream of chicken soup
  • 1/4 cup onion, chopped fine
  • 1 1/2 cup shredded cheddar cheese
  • 1/2 cup butter melted
  • salt and pepper to taste
  1. In a large bowl add the hash browns thawed or frozen, sour cream, soup, onion, shredded cheese and melted butter.
  2. Mix to combine. Spoon hash brown mixture into a greased 4 quart slow cooker.
  3. Sprinkle salt and pepper on top cover, and cook on low for 4-5 hours or until done. The casserole should be crispy on the sides and bubbly throughout.

Oven Directions: Place hash brown mixture into a lightly greased baking dish (9 x 13 x 2 in). This is optional but you can add a bit more cheese on top if you like. Bake at 350 degrees for 45 - 50 minutes. Let cool and serve.

This has been a family staple of ours for years. We top it with crushed corn flakes and butter and cook it in the oven. Yummy. And yes, it tastes good the next day. It will keep for a few days.


I make this only I use Fat Free chedder cheese soup, shred my own potatoes and sprinkle fat fre chedder cheese on top. I do not eat meat so i just changed it a little. I LOVE IT!!!

I made this recipe for dinner. I added leftover roast chicken and carrots. I must tell you it was delicous!
