Slow Cooked Hawaiian Chicken

Get a little taste of island living with this slow cooked Hawaiian chicken. Seasoned with pineapple and bell peppers, this tasty Hawaiian chicken recipe is bursting with tropical flavors. Kick off your sandals and enjoy this one pot dinner seaside.

Serves: 4

Ingredients
  • 1 pound boneless skinless chicken breast halves, cut into cubes
  • 4 carrots, sliced
  • 1/2 cup chicken broth
  • 1 teaspoon ground ginger
  • 1 tablespoon packed brown sugar
  • 2 tablespoons soy sauce
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon red pepper sauce
  • 1 tablespoon cornstarch
  • 1 can (about 8 ounces) pineapple chunks in juice, undrained
  • 1 medium red bell pepper, chopped
Instructions
  1. Mix chicken, carrots, broth, ginger root, brown sugar, soy sauce, allspice and pepper sauce in 3 1/2-4 quart slow cooker. Cover and cook on low heat setting for 7 to 8 hours, or until vegetables are tender and chicken is no longer pink in center.
     
  2. Mix cornstarch and juice from canned pineapples; gradually stir into chicken mixture. Stir in pineapple and bell pepper.
     
  3. Cover and cook on high heat setting for about 15 minutes, or until slightly thickened and bubbly.
