Simple Beans and Ham Soup

Easy soup recipes in the cold season are sometimes just what the doctor ordered. Simple Bean and Ham Soup is a mouthwatering treat that does not require any labor. Simply put the ingredients in your slow cooker and enjoy a hearty soup.

Ingredients

  • 1 lb. dried white beans, soaked in water.
  • 1 small smoked ham shank
  • 8 cups water
  • 2 cups onion, chopped
  • 1 cup celery, chopped
  • 1 cup carrots, diced
  • 1/4 cup parsley, minced
  • 2 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon pepper

Instructions

  1. The night before, measure the beans and place them in the slow cooker. Measure 3 times as much water as beans and add to the pot. Cover and cook on low overnight - about 12 hours.
     
  2. In the morning, drain off any water. Add the ham and remaining ingreds to the cooker.
     
  3. Cover and cook on low for 6-8 hours. Before serving, remove the ham to a cutting board. Remove the bone and dice the meat. While you are doing this, simmer the soup on high if it seems thin. Return the diced meat to the soup.
