Note: If you go with a shorter cook time, it's helpful to brown the beef slightly in a frying pan before tossing in the slow cooker. Just lightly brown.

Ingredients

  • 3 pounds lean beef stew meat cut into 1 1/2 inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 medium onions thinly sliced
  • 8 ounces can mushrooms undrained
  • 12 ounces can of beer (your choice on brand)
  • 1 tablespoon vinegar
  • 2 beef bouillon cubes
  • 2 teaspoons sugar
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 2 bay leaves

Instructions

  1. Put the beef in the slow cooker.
     
  2. Combine all the other ingredients and pour over the beef.
     
  3. Cook on low for 8-10 hours or on high for 4-5 hours. Before serving thicken juices if desired.

This recipe sounds like a keeper (minus the mushrooms for me) but it would be great to try with thickened sauce served over rice....a nice, hot meal on a cold night-can't wait to try!
