Alamo Tamale Supper

I love using my slow cooker! This dish is super-easy and budget-friendly...practically all you need is a can opener. If you like your tamales a bit spicier, just increase the amount of chili powder. Enjoy - my family sure does!

Serves: 6

Preparation Time: 10 min

Cooking Time: 2 hr

Ingredients
  • 2 15-ounce cans beef tamales
  • 1 medium onion, finely chopped
  • 1 8-ounce can whole kernel corn, drained
  • 1 8-ounce can tomato sauce
  • 1 teaspoon chili powder
  • 1 cup shredded cheddar cheese
  • 1/4 cup sliced ripe olives
Instructions
  1. Slice tamales in half crosswise and arrange in bottom of greased slow cooker.
     
  2. Sprinkle chopped onion over tamales.
     
  3. Add corn.
     
  4. Mix tomato sauce and chili powder; pour into slow cooker.
     
  5. Top with cheese and sprinkle with olives.
     
  6. Cover and cook on low setting for 5 to 7 hours or on high setting for 2 hours.
