Sunday Slow Cooker Supper

Sometimes you just need an easy weeknight meal to prepare for the family. That's where this recipe for Sunday Slow Cooker Supper comes in. It doesn't get much easier than this dish that simmers all day while you go about your business. With beef, eggplant, cabbage and more in the mix, you know this slow cooker dinner is going to be absolutely delicious, just from reading the ingredients list! Give it a try this weekend and see what your family thinks.

Cooking Time: 9 hr

  • 1/2 pound beef
  • 1 cup tomatoes
  • 1 eggplant, diced
  • 2 cups squash, diced
  • 1 cup cabbage, shredded
  • 2 cups snap beans
  • 1 onion, diced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian spice
  • salt and pepper, to taste
  1. Put all ingredients into slow cooker. Cook on LOW heat for 7-9 hours. Serve warm.
