Chocolate Meringue Cookies

Chocolate dessert recipes are easy to come by, but not all chocolate recipes are created equal. This chocolate meringue recipe is really something special, and it's perfect for Valentine's Day, Christmas, or any time you want a light and airy cookie.

Ingredients
  • 2 large egg whites
  • 1/2 teaspoon vanilla
  • 1 dash salt
  • 1/2 cup sugar
  • 1 cup chocolate chips
  • 1 cup walnuts, chopped
Instructions
  1. Preheat oven to 350F degrees.
     
  2. Beat together the egg whites, vanilla, and salt until frothy with an electric mixer.
     
  3. Slowly beat in the sugar, 1 tablespoon. at a time, on medium. Continue beating meringue until sugar dissolves and whites get glossy andform soft peaks.
     
  4. Gently fold in the chocolate chips and nuts.
     
  5. Drop by teaspoonfuls on well-greased cookie sheet.
     
  6. Place in the preheated oven.
     
  7. Close the door and turn the oven off. 
     
  8. Do not open the oven door for 4-5 hours (best to leave overnight).  Makes 12-18-20, depending on the size.
