The Ultimate Banana Chocolate Chip Cookies

Ingredients
- 3/4 cup flour
- 1/2 cup rolled oats
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 Tbsp coconut oil, melted
- 1 over ripe banana, mashed
- 1/4 cup brown sugar
- 1 tsp vanilla extract
- 1/3 cup chocolate chips

Preheat oven to 350ºF. Line a cookie sheet with parchment paper or a non-stick baking mat. Set aside.

In a large bowl, combine flour, oats, baking powder, and salt. Set aside.

n a medium bowl, mix coconut oil, banana, sugar, and vanilla.

Add wet ingredients to dry ingredients. Mix just until combined. Fold in chocolate chips.

Using a rounded tablespoon, drop dough onto prepared cookie sheet then flatten slightly.

Bake 12-14 minutes, or until edges begin to turn golden brown.

Recipes that use oats and bananas are especially great. Oats cut down on the amount of white flour used, while also adding some fiber, vitamins, and minerals. And bananas add some natural sweetness without all of the added sugar. This recipe goes to show that you can enjoy delicious, healthy chocolate chip cookies!
