Peanut Butter Cookies From Across The Pond

This delicious and unique peanut butter cookie recipe calls for golden syrup, a sugary syrup popular throughout the U.K., but difficult to find in America. You can use honey as a substitute.

  • 1/4 cup shortening
  • 1/4 cup brown sugar
  • 1/4 cup Roger's Golden syrup (substitute honey)
  • 1/2 c peanut butter
  • 1 egg unbeaten
  • 2 tb lemon juice
  • 2 tb lemon rind grated
  • 1 c flour
  • 1/4 ts salt
  • 1/2 ts baking soda

1.Cream shortening, sugar, syrup and peanut butter and beat until light and fluffy. Add egg, lemon juice and rind and mix thoroughly. Fold in flour, salt, and baking soda.

2. Chill dough thoroughly. Form dough into small balls and place 2 inches apart on greased cookie sheet. Press flat with tines of a fork. Bake 12 to 15 minutes at 375 degrees F.


Yields 5 dozen.
