Christmas Cherry Oatmeal Cookies

Christmas Cheery Oatmeal Cookies are delicious treats that are perfect for the holiday season. With a fruity and sweet taste from the cherries mixed with the crunchy goodness from the oats, these cookies will please your taste buds!

Ingredients

  • 6 1/3 ounces flour
  • 1 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 8 ounces unsalted butter, room temperature
  • 12 ounces light brown sugar
  • 2 teaspoons vanilla extract
  • 2 tablespoons instant espresso powder
  • 2 eggs
  • 3 ounces rolled oats
  • 1 3/4 ounce shredded coconut
  • 7 ounces pecans, chopped
  • 6 ounces semisweet chocolate pieces
  • 6 ounces dried cherries, chopped

Instructions

  1. Sift together the flour, soda, and salt. In a mixing bowl, cream the butter and sugar together until light and fluffy. Beat in the vanilla and espresso powder.
     
  2. One at a time, add the eggs, beating well after each addition.
     
  3. On low speed beat in the flour mixture until incorprated.
     
  4. Stir in the rolled oats, coconut, pecans, chocolate pieces and cherries.
     
  5. Chill the dough for 20 minutes. Using a #20 scoop (about 1/2 c) drop the dough onto a parchment-lined sheet pan.
     
  6. Gently press the mounds of dough until firm, about 1 hour.
     
  7. Preheat the oven to 350 degrees F. Bake the cookies for 12 to 15 minutes until centers are just set.
